Hello I dont know where or in wich NFPA say that the piping of the plant has to be closed to allow water flow go by two different paths to each hydrant.
Someone could help me, would have to be in NFPA 24, but I dont find the pargraph

NFPA 24 is correct but I don't think it goes into that kind of detail.
It depends on the complexity of the area being protected and hazard.
Although it's normally preferable to protect equipment from 2 directions,
so you often end up with at least a ring main for hydraulic purposes.
Best source of guidance are company standards.

If you go to the Appendix A of NFPA 24, part A.5.1 it says quite a bit on supply of water from both direction.
