Oil and Gas production

Dear all,

I am new to Oil and gas industry.
I am trying to understand various components associated with a oil and gas system.
For example, any comprehensive information on what the components do, why they are required, how they are operated etc etc.
For example, things like why we need a check valve, why we need a double block and bleed valve?
How do we control the flow? Is there a way to reverse the flow? Do we do it at all?
What is the first component, the fluids from the reservoir encounters when it leave the well?

Basically a general overview, which is not too technical.

Any books are appreciated as well.
